Whipped Cottage Cheese with Roasted Cherry Tomato Dip

INGREDIENTS

15 oz / 200g cottage cheese

1/4 cup finely chopped cilantro

1/2 cup packed basil

3 cloves of garlic

1/4 tsp salt or to taste

1 Tbsp extra virgin olive oil

5 cloves garlic

20 oz / 550 g container of cherry tomatoes, halved (about 2.5 cups)

1/4 tsp salt

5-6 leaves of fresh basil
INSTRUCTIONS
- Blend all ingredients for the cottage cheese mixture and spread on a platter.
- In a skillet, on low heat add the olive oil. Once hot add the garlic followed by the rest of the ingredients. Cook on low heat for about 10-12 minutes until the tomatoes start to release their juices and start to get soft and saucy.
- Let the tomatoes cool a bit then pour the mixture in the center of the cottage cheese mixture & serve.
