Whipped Cottage Cheese with Roasted Cherry Tomato Dip

A delicious simple high protein dip

PREPARATION TIME: 10 MIN | COOKING TIME: 10 MIN | TOTAL TIME: 20 MIN

INGREDIENTS

    Cottage Cheese Mixture
    • 15 oz / 200g cottage cheese

    • 1/4 cup finely chopped cilantro

    • 1/2 cup packed basil

    • 3 cloves of garlic

    • 1/4 tsp salt or to taste

    Cherry Tomato Mixture
    • 1 Tbsp extra virgin olive oil

    • 5 cloves garlic

    • 20 oz / 550 g container of cherry tomatoes, halved (about 2.5 cups)

    • 2 tsp Everiday Garlic Chili Oil

    • 1/4 tsp salt

    • 5-6 leaves of fresh basil

    INSTRUCTIONS

    1. Blend all ingredients for the cottage cheese mixture and spread on a platter.
    2. In a skillet, on low heat add the olive oil.  Once hot add the garlic followed by the rest of the ingredients.  Cook on low heat for about 10-12 minutes until the tomatoes start to release their juices and start to get soft and saucy.
    3. Let the tomatoes cool a bit then pour the mixture in the center of the  cottage cheese mixture & serve.
